Butlers Family Farm

On our farm we believe animals should be reared in as natural a way as possible. Cattle and sheep in Ireland enjoy a natural life and for the majority of their lives are free to graze outside. Our produce will be available to buy from mid October. Goatsbridge Trout Farm

At Goatsbridge Fish Farm, trout is their passion. Their knowledge and experience farming rainbow trout has been passed down through three generations. We are Rosemarie and Sile Hardy, 'Hardy Food'. We started our artisan food business simply enough by looking for a good quality pesto - we now make artisan Oat bread. Originally we could not find a single pesto that did not havesome filler, preservative or alternative ingredient in it. So we started making our own. An unadulterated pesto to an original Italian recipe. To cover the cost of making such a delicious but expensive production we decided to sell our pesto at the local food market. Very soon we realised it was the bread on which we offered the tasters of our pesto that was of more interest to our customers!

Joan & Bob’s Juicy Jams is a range of handmade preserves. Bob and Joan are a husband and wife team who have a combined passion for preserving, skills they learned from our mothers, who turned all the wild fruits, apples and berries grown on the family farms into the most memorable and delicious jams. At home in their kitchen in Thomastown, County Kilkenny, Ireland, they create and make all of their own unique recipes and flavour combinations. Alongside the creative process, they also complete the journey of the product; all the potting up, labelling, marketing and deliveries are done by themselves. They hand-tie colour coded ribbons on all their products and all the labels feature their own pen drawings and designs and recipe sugestions to recreate that nostalgic homemade look for your larder. They grow and harvest a lot of their own fruit and collect and freeze all the wild berries used in the jams. They sell their preserves to select Artisan food stores, craft butchers, health food shops and cafes, where they carry out regular tastings of their products.

Kilkenny Free Range is a 12-acre farm in Shellumsrath, Co. Kilkenny. The farm is run by Mary and Tony Walsh who've been producing free range poultry for close to fifteen years. Experimenting in her kitchen in 2004, home chef Helen Finnegan made the very first batch of what was to become Knockdrinna Farmhouse Cheese using just a few simple household utensils and a small amount of goats milk. Deciding to invest in her passion for good food, Helen began making cheese full time and the first Knockdrinna cheese – a Goats Cheese Camembert, Knockdrinna Snow – was born. In 2008 Helen took over the production of Lavistown from another local cheesemaker, Olivia Goodwillie. One of Ireland’s oldest Farmhouse cheeses, Lavistown is a cow’s milk Caerphilly style cheese, and has held its place as an Irish favourite for over 25 years, and is now well established under the Knockdrinna banner. Eight years on and Knockdrinna now has a range of goats, sheep, and cows cheeses and over 40 International and Irish awards, the most recent being a major category win for Knockdrinna Gold semi-hard goats cheese at the 2013 British Cheese Awards where it was named ‘Best Modern British’.

The Little Mill is owned and managed by the Mosse Family. Stretching back seven generations, the family have been milling on the banks of the River Nore in Co. Kilkenny. When you have been handling, milling and selecting wheat for that long, you’re not only knowledgeable but passionate about it, and that passion is evident not only in their milling but when creating their baking mixes. Breagagh Valley Artisan Meats was founded in 2013 as a small independent Kilkenny based company specialising in artisan meat production. Our founder and owner, George Navratil, studied Meat Technology and Meat Processing in Prague, in the Czech republic. Ryeland House Cookery School

Ryeland House Cookery School first open its doors in Kilkenny in 1991 to provide cooking classes and has been run ever since by the proprietor Mrs. Anne Neary. When it comes to food the ethos of Anne and the Ryeland House Cookery School has always been one of using locally sourced, great quality ingredients. Much of the food used at Ryeland House is grown on the home farm, our neighbours farms or is produced locally by skilled artisan food makers. All the eggs used in our cooking come from our own free range hens, which guests and students are encouraged to visit during their time at Ryeland.

Thomastown School of Food

The Kilkenny School of Food, Thomastown is a unique rural development initiative, funded through LEADER, with support from Kilkenny County Council and others. Its mission is to be a chef training hub in Ireland, to provide the hospitality industry with professionally trained staff. It offers accredited courses in Culinary Skills and professional chef training as well as classes for the amateur. Evening and weekend courses range from ‘Tuscan Pasta and Sauces’ to ‘Raw Foods’ and includes such topics as Indian Spices and Japanese cooking. The BallyKeefe Distillery story is extremely rare and unique with it being the only distillery in Ireland that carries a culture of sustainability and a blue print for the environment.

This state of the art new distillery at Ballykeefe is the first Whiskey distillery to operate in Kilkenny in over 200 years. It revives an Irish tradition of family farm distilleries lost for centuries. There is a huge emphasis on being eco-friendly, low carbon footprint and 100% sustainable, with the pot ale and spent grains fed to the cattle on the farm. This is a one of a kind in Ireland where everything from Grain to Glass is done on the family farm with no off-farm waste.

Ballykeefe Distillery Tour Experience

A tour of Ballykeefe Distillery is a must for anyone with an interest in Kilkenny’s historical association with Irish Whiskey. The guided tour enables guests to explore the distillery and discover the ancient art of Irish Whiskey making and the craftmanship that goes into each of our casks. Experience first-hand the sound, smell and feel of a fully operational distillery, with a behind-the-scenes tour teaching the fine art of distilling and of course a tasting of our signature white spirit range.

The duration of the tour is approx. 1 hour and includes a full distillery explaining how they make their Whiskey, Poitín, Gin & Vodka plus tastings of our award-winning Ballykeefe Vodka and Ballykeefe Poitín along with a Ballykeefe Gin & Tonic.
